Acoupa weakfish fillet with passion fruit

Ingredients:

● 1 kg of Amasa's acoupa weakfish fillet
● 150 g of Butter
● 400 ml of White Wine
● 200 ml of Olive oil
● 3 Sprigs (30 g) of fresh Oregano
● 2 garlic cloves
● 1 pinch of white pepper
● 3 teaspoons passion fruit jelly
● 100 ml sweet or Sicilian lemon juice
● Salt to taste
● Parsley to finish

Way of preparing:

Grease a frying pan with olive oil and heat 200g over high heat. Then dry each acoupa weakfish fillet with a paper towel. Place one by one in the skillet. Add the oregano and leave the fillets perfuming with the skillet lid closed. Lower the heat and gradually add the garlic, white wine and black pepper.
Finally, add the olive oil and salt. Leave it on low heat until you create a little sauce.

Sauce preparation:

In a small casserole put the butter in pieces and lead to low fire. Melt the butter leaving it velvety. Put the white wine, the passion fruit jelly and the 100 ml of sweet lemon juice and salt. When the sauce has velvety, turn it off. Finish with parsley.
